You said he’s double jabbed. Maybe he wants omicron to “boost” him rather than the shot? If that’s the case then maybe there’s some progress there in your efforts at sowing seeds of doubt among your coworkers. Whether it’s a good idea on his part to purposefully contract covid remains to be seen.

"Wo Menschen sind, da menschelt's", as my grandfather used to say. Typical story around here: whole family gets jabbed (as many times as required) so that they can all fly south on holiday over the new year's eve. On location, one family member does a Covid test for some reason, tests positive, then the whole family. All keep quiet and fly home as planned because who wants to quarantine away from home?

What's so crazy about it? I actually think that catching Omicron is a good idea. It buys you solid natural immunity cheaply (I bought mine with Delta, which was much more expensive). It should give you long-term partial protection against nastier strains.
